What are some kinds of easy meals that freeze well?

Question:

My husband burns water. I am trying to make some meals and freeze them before the baby comes. Do you have any ideas for easy meals that freeze well, that my husband can reheat with no problems?
Answer:


There are many meals that your husband can heat in a snap and they won't require too much effort on his part. Soups and many one-dish casseroles are great for the job. A good idea is to tape the instruction for a particular dish to the container before it goes into the freezer. That way the directions are right at his fingertips. You can also post a list of meals and instruction on the refrigerator for an easy reference. Remember to always thaw the next day's meal overnight, or else he might just throw in the towel and just order a pizza. I would like to recommend my on-line cookbook as a good place to find a lot of recipes that can meet your needs. I have several soups and several casseroles to choose from that my family loves. You can also check out the some really good recipes in the cookbook by Mimi Wilson and Mary Beth Lagerborg called "Once A Month Cooking". This is one of the places where I got my start.
